Garlic

There are so many tomato recipes to choose from out there.  I have included a couple I have tried and tested, if you have any to add I would love to hear from you

Passata

This is made from ripe tomatoes which have been puréed and sieved to remove the skin and seeds it make a wonderful concentrated flavour. It can be made and frozen for use in soups, sauces, pasta dishes, or casseroles. You can make it chunky or smooth depending on your requirements.

Tomato sauce for pizza or pasta

 1 Tablespoon -Olive oil

Some Cloves of garlic (1-3) depends on your taste

A good hand full -Basil / or a mixture of oregano, marjoram and basil

 2 Onions

2 lbs (1.5kg) Plum tomatoes

Salt and pepper

Method

Heat olive oil on a low heat in a large heavy bottomed saucepan

Add chopped onions, stir to make sure that onions are coated then leave to simmer slowly until translucent.

Add in garlic and turn through the onions. Leave for 2 minutes or so.

Add the chopped fresh tomatoes. Stir through to coat with oil and leave for five minutes over a low heat.

When the mixture is simmering add the chopped herbs

Leave the sauce to simmer over a low heat until the tomatoes fall apart.

Simmer very gently for about an hour until the sauce has reduced and thickened stir to prevent it sticking add water if it thickens too much.

After an hour, taste, add salt and pepper before removing from the heat.

It needs to cook for an hour to intensify the flaovours at this point you can add whatever variations you fancy adding it to mince for a bolognaise saue or thickening it so it can be used on pizza bases.

This also freezes well, so if you make a large batch you can put in family sized portions or individual and have the night off cooking – always a bonus.


Basic Salsa

 

- Olive oil – if you are trying to reduce your oil intake you can substitute this with the juice of a lime

-Cherry tomatoes –these look great – but if you only have larger toms just cut them up and deseed

-Garlic cloves, finely chopped – (depending how much you like garlic depends on the amount you add!)

-Onion, finely chopped

-Chopped fresh parsley/oregano

-Chopped fresh basil

-Salt and freshly ground black pepper

-Spice it up with fresh chilli – if you fancy

 

Method

I have left the amounts out as it depends if you are having this with a meal or as a dip
Place the oil/ lime, chopped tomatoes, garlic, onion, parsley and basil into a bowl. Mix together and season to taste, with salt and freshly ground black pepper. Leave it to marinade for at least half an hour before serving with meal .


Tomato Bruschetta

 

A wonderful snack at any time, quick and easy to prepare.

-Ciabatta or French baton

-Virgin olive oil

-A garlic clove

-Ripe tomatoes

-Fresh Basil/oregano

-Salt and pepper

Make a cross cut with a sharp knife at the top of the tomatoes. Then place them in a bowl of boiling water and leave them for just a minute before removing them and removing the skins and seeds. Chop them roughly and leave to cool to one side, at this point you can add different flavourings like basil /oregano to the mixture.

Toast your sliced bread under the grill or on a griddle if you fancy a stripy effect, brush your toasted bread with virgin olive oil and rub your cut garlic over the surface of the toast. Place your tomato mixture on the toast and season.

Try a  stir-fry – just a couple of minutes in the pan  with olive oil, garlic, salami and basil poured over your favourite pasta.

Organic Tomatoes

Growing Organic Tomatoes can be a challange but the satisfaction and taste is such a reward it’s worth it.

Spring arrives and the harsh winter is finally over,it is time to start planting those organic tomatoes in time for summer. It doesn’t matter if you intent planting hybrid or heritage tomato plants, you should be ready to start as soon as the temperatures are warm and stable enough for the organic tomatoes to thrive.

So here are my top 7 tips for growing Organic Tomatoes

 

1. Weather conditions for Tomatoes :

Keep an eye on the temperature which in this day and age is simple. Either go online and get an up to date reading or I use my iPod and have downloaded an app to do this. Make sure you don’t plant out your tomato plants until the temperatures are above 10 degrees

2. Temperature of the Soil:

Make sure your soil is above 12 degrees before planting out your seedlings. I don’t often plant my tomatoes before May in the UK as we can often suffer a late frost

3. Warming the soil:

If you want to speed up the process of warming the soil then you can cover your beds with clear or black plastic about a week before planting

4. Separate your Organic Tomato plants:

Organic Tomatoes like to be about 3 feet apart allowing the roots to spread out and make sure you plant your tomato plant in a deep enough hole. If they are a bit leggy don’t forget you can bury them deep to encourage good strong stems.

5. Feeding & Watering Tomatoes:

Put a cup of organic fertiliser such as bone meal before you plant in your carefully prepared soil. Giving the soil a good soaking before planting helps with root expansion. Organic tomatoes need the same love and care as other tomatoes and regular feeding with a good comfrey fertilizer.

7. Pest & Insect Control for Organic Tomatoes:

To keep pests away companion plant bulbs of garlic around the area as the little critters hate the smell. French Marigolds are good too-  Did you know that you can buy ladybugs for your garden. They eat many of the insects that would just love to eat your plants The best tip of all I can give you is have fun growing organic tomatoes. It is undoubtedly harder work but the rewards are justifiable no chemicals in your tomatoes. Enjoy being in the garden, the sun, the sounds of summer and the exercise and you will have a bumper crop of tomatoes this summer.
